In December 2016, the United Nations General Assembly designated 18th June as Sustainable Gastronomy Day with the purpose of recognising gastronomy as a cultural expression of diversity in the world and as a key tool to transform our food systems into more sustainable models.
In particular, sustainable gastronomy celebrates seasonal and local ingredients and products, as well as contributing to the preservation of wildlife and our culinary traditions. The purpose of this day is to promote the use of clean energy in restaurants (use of gas, electricity or natural gas instead of coal), as well as to inform the general public about the benefits of sustainable gastronomy and to promote ecological, healthy and sustainable diets.
